I've told several people about this fabolous recipe from the book Deceptively Delicious by Jessica Seinfeld. Her book is full of great recipes that disguise fruit and veggies in food that kids like. I highly recommend her book! I won't be sharing anymore of her recipes on here, just wanted to give you a sampling so that you could see what her book has to offer.
Applesauce Muffins (with butternut squash or carrot)
Prep: 20 minutes
Total: 40 minutes
Yields: 12 muffins
Topping
2/3 c. old-fashioned oats
1/4 c. firmly packed light or dark brown sugar
1 tsp. cinnamon
2 TBS soft tub margarin spread, melted
Batter
1 1/2 c. all purpose flour
1 c. old fashioned oats
1 tsp. baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1 c. unsweetened applesauce
1/2 c milk
1/2 c. butternut squash or carrot puree
1/2 c. firmly packed light or dark brown sugar
1/4 c. vegetable or canola oil
1 large egg
1. Preheat the oven to 400*F. Coat a 12-cup muffin tin with cooking spray or line with paper baking cups.
2. To make the topping, stir together the oats, sugar, and cinnamon in a bowl. Stir in the margarine.
3. To make the batter, combine the flour, oats, baking powder, baking soda, and cinnamon in a large mixing bowl, or a zipperlock bag and stir of shake to mix. IN a second bowl. mis the applesauce with the milk, vegatable puree, sugar, oil, and egg with a wooden spoon. Add the flour mixture slowly, stirring until ust moistened. Do not overmix-- the batter is supposed to be lumpy.
4. Divide the batter evenly among the muffin cups and sporinkle with the streusel topping. Bake util the toppin is lightly browned and a toothpick comes out clean when inseted into the center of the muffins, 18-20 minutes, Turn the muffins out onto a rack and serve warm or cool.
